Margaret’s Banana Bread Recipe

This is a very old recipe that has been passed on through the generations. Yummy!
Ingredients:
- 2 cups self-raising flour
- pinch salt
- 1/2 cup castor sugar
- 3 oz/80 gm butter
- 1/2 teaspoon baking soda
- 1/2 cup milk
- 1 lightly beaten egg
- 2 large mashed bananas
Method:
Sift the flour and salt. Stir in the sugar. Rub the butter into the flour with fingertips until well combined. Dissolve the baking soda in the milk and add to the flour mixture with the egg and mashed banana. Stir until thoroughly blended and spread in a greased and floured 10 x 6 inch/15 x 25 cm loaf tin. Bake at 350 – 375 F/180- 190 C for 50 – 60 minutes (if you are using a fan-forced oven then you will need to lower the temperature by up to 10 degrees centigrade and/or adjust the time). Turn onto a wire rack to cool. Serve sliced with butter.
